has anyone ever managed to successfully get a recording off one of these boxes (and onto an external disc)?

Would it be possible to swap a PVR-8000T HDD into a HDR FOX T2, for example, just to extract its content?

Almost certainly not. With the HDR-FOX T2 it is now possible to decrypt content on a PC; if the PVR-8000T used the same method of forming the key then it just might be possible. See https://hummy.tv/forum/threads/windows-version-of-offline-decryption-hfodu.8770/

The PVR-9200T's recordings were not decrypted and it possible that the earlier PVR-8000T's recordings were not either.
There was some extraction of the PVR-8000T using a third party tool written for TIVO HDDs. It was named something (!) like twinRIP or TIVOrip.
A description of playback on avforums (?) was as if the player that was being used was attempting to play a Transport Stream file as if it were a Program Stream file. These days media players that can cope with TS files are a bit more common.

Also the PVR-8000T was an SD machine. Given the history of how encryption was introduced this early machine would not have had encryption.
(Edit: having said that there does appear to have been some contemplation that 16 bytes in each frame that appeared to be corrupted could be encrypted. http://groups.yahoo.com/group/TwinRIP/ To quote phew "See message Nos 278 & 302 on the group, and some others around Dec 2004 & Feb 2005".
Based on that it does appear that attempting to extract usable recordings from the PVR-8000T's HDD is a lost cause. )

No.
Not even if you could get the SATA based HDR-FOX T2 to recognise the IDE disk as being a viable disk to use. The HDR-FOX T2 would want to format it as its partition structure is different.
