Very odd, especially as it is on two separate boxes. I don't think I have seen this problem mentioned by anyone before, even with one box, let alone two.
When you say it refuses to accept any recording instructions, what exactly happens when you try?
And if you are doing a non-smart retune. as is being recommended, don't forget to photograph your recording schedule first as you will have to rebuild it after the retune.
I, like you, have had the 5000T for about two years and have been frequenting the forums regularly. Though there have been plenty of comments on the GUI, yours is the first complaint I have seen from anyone with breakup when having a strong (but not excessive) signal, so I think your argument...
I wonder if the "unstable tuners" suggestion relates to the fact that checking signal levels often only reveals results for one tuner, which is perfectly normal.
It only shows tuners which are actually being used and the other tuners are shut down at that time.
On most transmitters, COM8 is now on Ch 56. There may still be a few exceptions though.

You will probably lose any recording schedules on the Mux you are retuning.
Take a photo of all pages of your schedule first. Then you can reprogramme any schedule entries you might lose.
Had an unusual one with my 5000T today. Tried to access a programme from earlier today on iPlayer from the Guide’s EPG and though it showed as available, nothing happened, just a blank screen.
I then went into iPlayer via the “F” button, found the programme and it played OK.
Red F button, select Players along the top, Select the little "i" in the top right corner. When you get to the cookies page, press "+", (not OK). Then press OK once it says they have been cleared.
Sometimes helps if the catchup EPG goes missing as well.
