I tried following the artical, but I don't see the "optional features" option thry mention, but as per earlier in nthis thread I can select nthese options using "Turn Window Features off or no". There is the box SMB 1.1 /CFS Fileshare Support and under that boxes for Automatic Removal, Client and Server.

I will be need more guidence regarding usinmg NFS, FTP or Samba 3.

For the record, I think that's out of date. Optional features are in Control panel -> Programs & Features-> Turn Windows features on & off (rather than Settings->Apps). Try Enable SMB1

On my Windows 11 computer, after selecting "Turn Windows Features on & off" the list of features never appears; is that a problem with my computer?

I believe so. There are various reasons. You could try looking through https://windowsreport.com/windows-11-optional-features-empty/ or similar to resurrect the list.
