Hey I recently given this box from a friend and have no previous experience with the custom firmware (system info below). I've tried to follow the various youtube guides but found them too old to follow once in the web interface. I've installed the custom firmware and able to install the full web interface to a ext2 formatted flash drive. I've rebooted and on my device I can't record any shows using the ext2 flash drive and the epg web interface guide doesn't ever update and display. Any helpful advice? I've attached the web interface diagnostic logs - any not included displayed blank so didn't see a reason to share.

Don't follow YouTube. I know it's everyone's go-to these days, but actually it's the blind leading the blind. Nobody here (the only official support) has put anything on there (so far as I know), and anyone who has is just trying to cash in on views when all the actual work was done by a few individuals here.

You do not need CF to record to a USB stick (UPD). What you do need is it big enough (IIRC >64GB), and then all you have to do is format it using the machine's own menus. It has to be allocated as a recording drive in the machine's menus: Menu >> System >> Data Storage. Only install the WebIF (etc) after that (because doing it before will get wiped out).

However, I strongly advise not using a UPD for this. It will die very quickly, and it (probably) doesn't have a sufficient write rate. Use a USB HDD or SSD. UPD is fine if all you want to do is run the CF, but recording is a different matter. The point of formatting Ext2 is to be kinder to the UPD, but that is no good if you want to record. The built-in format wil be Ext3.
