It's a perfectly normal situation that both receivers will power the LNB. There (is likely to or) should be blocking diodes in the LNB (and or distribution switches) to prevent back-feeding from one device to another.

ALL satellite tuners have to supply power: For universal LNBs it's 13V for V polarity and 18V for H.
Plus the presence / absence of a 22kHz tone signal for Hi/Lo band switching.
Some form of cross-coupled interference seems a possibility? Or ac hum on a DC path. Maybe connect all the LNB...
So a log worked with 10kW erp before DSO and then the 100kW erp now (+10dB)... and then needed a masthead amp (minimum another 10dB typically?). Logs have a weak spot for water ingress according to Justin the owner of this useful website...

Signal level of 48-57 isn't imho sufficient for a -T2 (or at least not my one) {that level gave me occasional breakup of channels ex Tacolneston when I was in Hemsby with my caravan a few weeks ago. Trees and lack of line of sight won't have helped. 60-70% is...

The Wrekin, Lark Stoke and Bromsgrove
Sudbury and Rouncefell
Divis and Killowen Mountain
Ponypool and Mynydd Machen
plus others
but they are over much smaller areas than the pseudo-nation-wide COM7/8 on 55/56.
My guess is your problems will have...
Only way to get a chance of a fix is to report the problems to the broadcasters.
These channels probably pay someone good money to ingest and then play out their content and would expect such things to rarely, if ever, happen. Their management will kick the appropriate people I'd hope ;)

So you cannot guarantee the programme will be in 5.1 always. Suck it and see is the best approach. I suspect some Jubilee programming may be in 5.1 (not on ITV though).
Eurovision last night was 5.1 As was the Football before it (probably, I don't watch sports) that overran and force Pointless over to BBC 2. Any feature film is likely to be 5.1 on BBC & C4. Quite a few of the recent 'big' dramas have been 5.1 (BBC, C4 - ITV and C5 are stereo only).

AVR in standby (with CBL/SAT input passthrough to TV) Hummy volume control works on both HD and SD channels. When AVR on the Hummy remote volume only affects SD channels.
What else could be happening except the Hummy decoding to...
All HD programmes are transcoded to Dolby Digital (DD) on the fly by all Freeview HD devices... that DD is fixed level and decoded to analogue sound either in the TV where they support that decoding, and/or an AVR.
Note DD can be stereo 2.0 or surround 5.1.

Programme Making and Special Events (PMSE) use a lot of the (clear in the location) frequencies in the UHF TV broadcast spectrum; and always have.
Also licence-exempt white space devices (WSD) can use the entire 470-694 MHz band - they 'find' clear frequencies to work on AIUI.

If you now have AV2HDR v 3.3 the next thing you should do is to install the Custom Firmware (to enable the ftp upload from AV2HDR onto the -HDR).
While you are at it also install Nowster's settop patch so that future HD recordings will be unencrypted...
Ideally the antennas should be combined using a filter to prevent this sort of thing happening... But they are now rare / difficult to find that suit the two transmitters: unless this https://www.aerialsandtv.com/product/diplexer-channel-38-uhf-uhf would work.

The latest freesat 4k boxes (made by Arris for freesat) are compatible with the $ky Q LNBs though... ;)
(and give four tuner access, rather than limited to two).
It's a simple swap of the LNB on the dish - provided it can be safely accessed.
