An overall setting I'm afraid - I always notice it most if I'm watching the main news (so if I'm bugged enough I watch the BBC instead!!) - but I don't notice it as much on any of the other stuff on ITV so I wondered if it's anything to do with how ITV get the news program from ITN??
Yes I found that as well - I had a play with the Audio Delay option in the Hummy menu to make it less noticeable but you have to find the balance to get ITV HD OK without messing up everything else.
Schedules can indeed be backed up as a feature of the Custom Firmware - which you can find out about on the Wiki and in the pinned topics at the top of this section. Not sure about backing up the channel list though - maybe an idea to add to the to-do list?
I've found it handy if people have offered to lend me a DVD of a TV series or something like that. Rather than rush through watching all the episodes to give the disc back, I do a rip to my NAS then watch 'em at whatever pace I like.
Assuming you have a non copy protected DVD ;) I use Freemake to extract everything to a file all in one step. You can play with the Output formats and various resolution settings to your preference but it works well for me and once you press Go you only need to come back when it's finished - in...
Yes that's correct - the file is presumably always saved on the box even with the std firmware, but the mods allow access to it either directly via Telnet if you know those commands or more conveniently (for people like me especially) via the Web Interface.

I had a hunt about on the forums for xbmc - there might be some useful info somewhere in Here (Click) . It does say that XBMC is alright but may struggle with HD - SplashPlayer is another option which seems to have had better results.
